Cantina Vinopolis was born out of the idea for an international wine centre and visitor attraction to be created in the massive Victorian railway arches that cross Borough Market carrying the railway lines across the Thames. Naturally a restaurant and wine bar would be a part of any plans. Eventually London restaurateurs, Claudio Pulze  (Michelin starred) and Trevor Gulliver (Moet et  Chandon Restaurant of the Year) found themselves with an opportunity to open a restaurant and build a wine bar. Cantina Vinopolis opened in  August 1999 and Wine Wharf in January 2000.
